Vegetable fried rice

Chinese fried rice is made with fragrant and delicious jasmine rice, with carrots, peas, and scrambled eggs which are very tasty. This delicately fried stir-fry dish transforms the indisputably delicious white rice into soft-scented grains with salty soy sauce and thrown with colorful vegetables. I often use leftover rice to eat this fast and convenient and very delicious meal.

Ingredients :


  • 1 cup raw jasmine rice, (180g)
  • 2 cups water, (480ml)
  • 2 tablespoons vegetable oil, (30ml) divided
  • 1/4 cup minced white onion, (30g)
  • 1 tablespoon minced garlic, (10g)
  • half of cup diced carrots, (70g) 1/4-inch dice
  • 1 teaspoon sesame oil, (15ml)
  • 2 huge eggs, whisked
  • half cup peas, (65g) frozen, defrosted
  • 1 tablespoon soy sauce, (15ml)
  • kosher salt, as needed for seasoning
  • white pepper, as needed for seasoning
  • 2 tablespoon thinly sliced green onions, (6g)

Instructions


  1. In a three-quart sized saucepan, rinse uncooked rice with cool water until it runs clean, then drain off extra water.
  2. Add 2 cups of water to the washed rice.
  3. Bring water to a boil and then turn down warmness to a simmer and cover with a lid.
  4. Simmer rice for 10 to 12 mins, or till all the water is absorbed and rice is soft.
  5. Remove rice from the heat and allow it to take a seat covered for 5 to ten minutes.

Notes
