Japanese Ramen Noodles

Japanese Ramen Noodle is a trendy noodle soup in Japan. Japanese Ramen Noodles were initially been Chinese-style noodles, but have been modified and improved over the years, and evolved into our own food.
There are millions of Ramen restaurants in Japan ranging from Chinese mom and pop restaurants in the neighborhood, Japanese Mie Ramen street carts open late at night, to sophisticated Japanese Ramen Noodle shops in the cities. People don't mind waiting in line for hours to get in as long as it's good. Fresh noodles are the best, but another very popular form of Japanese Ramen Noodles is instant noodles. This is a whole food sub-culture in Japan. There are millions of types that you can buy at the supermarket. Some are so good that they taste better than a bad Ramen shop.
There are two main components in Japanese Ramen Noodles, namely: noodles and soup. The noodles are called Chinese-style noodles (Chuka-men- 中華 麺), but these really aren't like Chinese noodles anymore. They are wheat noodles with a hard and chewy texture. The texture is very important because the noodles in the soup are hot when eating and may absorb the soup too much and become too soft. Unfortunately, it's very difficult to find good noodles outside of Japan. We tested a lot of the types that you can find in the US, but the dried American Chuka that you can buy at the grocery store is not very good. If you can find dried Chuka-men from Japan use that. We found fresh angel hair pasta, which you can find in the coolers of many grocery stores, is acceptable even though the texture is still softer. Dried thin spaghetti is also a good substitute for Chuka-men. The key is to boil the noodles in water with baking soda because the noodles give it a different taste of ramen noodles.
The other half of Ramen is soup. In general, there are three types of Ramen soup: Shyoyu (soy sauce), Miso, and Shio (salt). Usually, pork, chicken or seafood broth is used for a soup base, and it is then seasoned with soy sauce, miso, or salt. We make soy sauce soup which is very basic in this recipe. However, as mentioned above, there are many Japanese Ramen Noodle shops and so many flavor combinations for soup. If you want to play around and experiment, just try it.

You can invest a lot of time and ingredients and research complicated and unusual soups, and of course, it's hard to beat Japanese Ramen Noodles in big restaurants, but our version here is pretty good for homemade Japanese Ramen Noodles and very easy to make.

Cooking time: 15 minutes
Results: 3-4 servings

Ingredients Japanese Ramen Noodles :

Salted pork :

  • 1 pound of pork or 1 pound of chicken
  • 1 teaspoon salt

Soup :

  • 6 cups of water (1.5L)
  • 50g of ginger, sliced
  • 3 cloves of garlic, skinned
  • 1 bunch of green onions
  • 4 soy sauce
  • 2 tablespoons of sake
  • 1 teaspoon salt
  • 1 teaspoon sesame oil

Noodles :

  • 9 oz fresh angel hair paste (225g)
  • 8 glasses of water (2L)
  • 2 tablespoons of baking soda

additional :

  • boiled egg section
  • bean sprouts, pale for a while
  • green onions, finely chopped

Japanese Ramen Noodle Instructions :

  1. Apply salt to pork or chicken and leave it in the fridge.
  2. In the pan, add water, ginger root, garlic, green onions, and salted pork, and boil over high heat. Skim fat and other floating foam. 
  3. Then cover, reduce heat to low heat, and simmer for 1 1/2 to 2 hours. 
  4. Let the broth and pork or chicken fully cool in the pan. 
  5. Strain and store pork or chicken. 
  6. Slice pork or chicken and set aside for toppings.
  7. Prepare the rest of the topping right now (boiled eggs, bean sprouts, cut green onions), before making soup and noodles. 
  8. After the noodles are cooked, you have to add the soup and the topping immediately or the noodles will be soft, so you won't have time to prepare the topping at the end.
  9. And then boil the broth and add soy sauce, sake, salt, and sesame oil.
  10.  Let it simmer until the noodles are ready.
  11. In boiling water in a pan, add baking soda (be careful, maybe boil), then add fresh angel hair pasta. 
  12. Cook the pasta for 30 seconds, and strain. 
  13. Immediately divide the noodles into a bowl and add the soup to the noodles. 
  14. Sprinkle boiled eggs, bean sprouts, green onions, and sliced pork or chicken.
