If you don't think you will have time to make it when you need it, you can prepare Bruschetta toppings the night before and allow the flavors to blend and marinate together before topping your chicken the next day! Cook your chicken the day before too, and you will eat in minutes on demand!

some tips for getting the perfect bruschetta chicken:

Use a mixture of dried Italian herbs or Italian herbs. If you prefer a softer mixture, you can make your own mix with dried oregano, dried basil, dried parsley, maybe some rosemary, or any other mixture you like.

I love Roma tomatoes with this Bruschetta. You can replace it with ripe tomatoes, or use grape tomatoes or cherry tomatoes!

Not a fan of onions? No problem! Replace with finely chopped garlic!

Try using fresh parmesan cheese, and thinly sliced with a vegetable peeler!

You can bake your chicken in a skillet OR grill on a grill skillet (or use a barbecue to add flavor)

If you can't find balsamic glaze, you can make it yourself in less than 10 minutes, and it's very valuable! But again, it's entirely up to you. I have included homemade balsamic glaze in the recipe for you. Technically, balsamic glaze doesn't need any sugar to thicken it into a glaze, however, I prefer a little brown sugar. You can leave it if you wish.

For Chickens:

  • 2 large boneless and skinless large chicken breasts are cut in half horizontally to produce 4 fillets
  • 3 teaspoons of Italian Seasoning *
  • 2 teaspoons of chopped garlic
  • salt to taste
  • 1 tablespoon of olive oil (for cooking)

For Toppings:

  • 4 Roma tomatoes finely chopped
  • 1/4 finely chopped onion (or 3 cloves of finely chopped garlic)
  • 4 tablespoons of freshly grated basil
  • 2 tablespoons of olive oil
  • salt to taste
  • ½ cup of freshly shaved Parmesan cheese

Balsamic Glaze: (You can use the store-purchased or this recipe):

  • 1/2 cup of balsamic vinegar
  • 2 teaspoons brown sugar (OPTIONAL)

Steps to make Italian Herb Chicken Bruschetta Chicken Recipe :


  1. Season the chicken with Italian seasoning, garlic, and salt. Heat the oil in a skillet or pan, and roast the chicken breast on medium-high heat until browned on both sides and cook until done (about 6 minutes each). Remove from pan let it rest.
  2. Mix tomatoes, shallots, basil, olive oil in a bowl. Season with salt. Cover each chicken breast with a mixture of tomatoes and parmesan cheese.
  3. Serve immediately with balsamic glaze (optional).

For Balsamic Glaze:

(If making from scratch, prepare while the chicken is being cooked.) Mix sugar (if using) and vinegar in a small saucepan over high heat and bring to a boil. Reduce heat to low; simmer for 5-8 minutes or until the mixture thickens and decreases to glaze. (If not using sugar, leave it for 12-15 minutes over low heat).

NOTE

* If you don't have Italian seasoning, use dried Italian spices. Or combine 1 teaspoon of dried oregano, 1 teaspoon of dried basil, and 1 teaspoon of dried parsley.
