Béarnaise and steak are lighters made in heaven, but this sauce has several other divine uses. Try spooning over boiled eggs or spread on grilled fish. This elegant Bearnaise Sauce is rather difficult to make; cook in a double boiler, and stir continuously.
This original recipe produces 6 very tasty food portions.

Ingredients for making Bearnaise sauce steak recipes:


  • 2 tablespoons of dried tarragon
  • ¾ cup of red wine vinegar
  • 2 tablespoons of chopped shallot
  • 3 egg yolks
  • ¼ glass of hot water
  • ½ lemon, juiced
  • 1 pinch of salt
  • 1 pinch of cayenne pepper
  • 1 cup of butter, melted

Directions for making Bearnaise sauce steak recipes :


  • First in a heavy skillet, stir-fry the tarragon, red wine vinegar, and cut the shallots over medium heat for 10 to 15 minutes, or until the mixture becomes like pasta. Remove from fire.
  • Second, mix egg yolks, 1/8 cup of hot water, lemon juice, salt and pepper at the top of the double set over boiling water. 
  • Third Cook and then stir until the mixture reaches the consistency of mayonnaise. 
  • Fourth, Remove mixture from heat.
  •  Five, Add melted butter slowly, stirring constantly. If the mixture becomes too thick, dilute with the remaining 1/8 cup of hot water. 
  • Six , Add tarragon, wine, vinegar, and onion mixture and puree well.
