Mahi-mahi  with Avocado
As part of healthy eating, I try to cook fish food once or twice a week. I am rather particular about what fish I will eat. I tend to prefer fish with a mild taste - and no signs of skin at all! So, we eat a lot of haddock, tilapia, and mahi-mahi.

Recently I discovered that my grocery store has mostly frozen fish fillets that are individually packaged. You might think that it's better to buy fresh fish than frozen fillets - I think so too, at first. However, I see "pre-frozen" on many labels. In other words - "we will charge more for fish for you." Frozen fish is more affordable, and does not have to be used on the same day, which is useful.

So, this weekend I decided to make Mahi-mahi. The weather is warm and I decided to prefer to roast outside instead of using an oven inside. So, I prepared a quick marinade and cooked fish with fresh corn that I found in the shop. I also used some of the same flavors from the marinade to make a fresh avocado salad to serve on the fish. The combination is fresh, delicious and healthy.

Nutritional information for this dish is difficult to calculate because it really depends on the type and number of fish you choose to use. In general, most fish are good for you - and this preparation does not add too much fat. So, I'm sure it's pretty healthy - even without nutritional facts. You can vary the amount of fish you have. This recipe will work well for around 10-12 ounces of fish.

Preparation: 15 minutes
Cook: 12 minutes; 
Soak: 20-30 minutes. 

This salsa can be served with grilled seafood, poultry or meat. Choose the type of chili you use based on the heat you like. Chili serrano is hotter than jalapeño chili; If you want more kicks, don't remove the seeds. Make sure you wear gloves when handling chili.

Material :

  • Salsa: 1 ripe avocado, cut into 1 / 4- to 1/2-inch pieces
  • 2 plum tomatoes, cut into 1/2-inch pieces
  • 1 cup minced shallots
  • 1 jalapeño chili or serrano chili, seeded and chopped
  • 1/2 cup of freshly chopped coriander
  • 1 lemon, 1/2 teaspoon juice of halal salt
  • Mahi: 1 1/2 pounds of mahi-mahi, cut into 4 parts
  • 1 tablespoon of extra virgin olive oil
  • 1 lemon, 1/2 teaspoon juice of halal salt
  • 1/2 teaspoon of fresh black pepper, to taste

How to make :

Step 1

Mix all ingredients in a large container, not reactive (glass, stainless steel, or coated ceramic), and gently mix with the pan. Set aside. You can prepare this salsa for several hours before serving and store it in the refrigerator in a closed container.

Step 2

In deep and non-reactive plates (glass, stainless steel or layered ceramics), soak the fish with other ingredients for 20-30 minutes before baking.


Step 3
Bake on coals or on a grill, or cook under broilers for 6-8 minutes per side.

Step 4
Serve fish with salsa to make more delicious.
